Machining Stainless Steel for Food Processing: Key Rules
Austenitic stainless steel (304, 316L) is the dominant material in food contact equipment. It is also one of the most difficult to machine correctly. Work hardening is the main enemy — if you dwell, run too slowly, or use a worn tool, the surface hardens and the next pass destroys the insert.
- Use positive rake angle inserts (e.g. Korloy PC9030 or Iscar IC907) — these cut, not scrape
- Maintain a continuous feed rate — never allow the tool to dwell in contact with the part
- Use water-based coolant with high pressure at the cutting edge — prevents heat build-up and improves chip evacuation
- Replace inserts before they are fully worn — a chipped insert on 316L causes immediate work hardening and surface defects
- For surface finish quality on contact surfaces, finish with a fresh insert at lower feed rate — Ra 1.6 µm is typically the food-grade minimum for machined surfaces
- Specify PVD-coated (TiAlN) grades for turning; for milling, uncoated fine-grained carbide often outperforms coated on 316L
